Yummy No-Meat Lunch Burritos OAMC

"This is a OAMC lunch that my husband and I just love! There is no meat involved, but you don't miss it at all! To make a truly fab meal, serve with sour cream, your favorite salsa and guacamole!"

directions

  • Cook rice in water according to package directions.
  • Once done, add drained beans, corn and Rotel to rice.
  • Mix throughly.
  • Add cheese.
  • Mix throughly again.
  • Divide mix evenly on the tortillas.
  • Fold up to make burritos.
  • Wrap each burrito in plastic wrap then foil.
  • Freeze what won't be used that week.
  • *When ready to use*.
  • Remove foil.
  • Pop in microwave oven for 1 - 1 1/2 min or until center is hot.
  • Carefully remove plastic wrap.
  • Serve and enjoy.
  • ***When using the frozen variety***.
  • Thaw.

  1. Great recipe and tastes delicious. And so simple to make - mix in the bowl and roll into a tortilla. I made it for a second time - the first time was very good This time I added a generic brand of rotel tomatoes and a small can of chopped green chilis. Very good. I make enough for 15 or so burritos which will take me through 14 breakfasts. I love having these for breakfast.

  3. WOW! I followed the recipe to a "T" except I used corn with diced peppers and a monterey and cheddar blend. For something as simple as this, IT IS AWESOME! Thanks so much. This would be great at a pot luck with a side of sour cream and salsa. Makes a TON!
     
  4. This is a great idea!! We love these. We make them with the 1 point 10 inch tortillas that are real thin. The bean and cheese mixture comes out to 3 points. So that's a filling 4 point meal especially if you add saltines. Next time I will make it with 2 cans of rotel. Thanks!!!
     
  5. this was pretty good. I added some adobo seasoning just to give it some extra flavor. I would also ( in the future) add extra cheese, probably cheddar or mexican blend.
