- 1587.57 g broiler-fryer chickens, cut up
- 29.58 ml salad oil or 29.58 ml olive oil
- 473.18 ml finely chopped onions
- 1 clove garlic, crushed
- 453.59 g can stewed tomatoes
- 226.79 g can tomato sauce
- 118.29 ml condensed chicken broth, undiluted
- salt
- 22.18-29.58 ml chili powder
- 4.92 ml dried oregano
- 340.19 g can corn mixed with chopped peppers, undrained
- 236.59 ml pitted ripe olives
- 473.18 ml yellow cornmeal
- 118.29 ml grated cheddar cheese
directions
- Wash chicken and pat dry.
- In hot oil saute onion and garlic till tender.
- Add chicken, stewed tomatoes, tomato sauce, chicken broth and 1 tsp salt.
- Bring to boil, stirring occasionally; reduce heat and simmer with cover for 30 minutes or until tender.
- Remove from heat, let stand until chicken is cool enought to remove meat from bones, keeping meat in large pieces.
- Add chili powder and oregano to tomato liquid.
- Boil, uncovered until reduced to about 3 cups.
- Stir in chicken, corn and olives, set aside.
- In saucepan, combine cornmeal with 4 cups water and 1 tsp salt.
- Bring to boil, stirring constantly until thick, then let stand for about 5 minutes.
- Preheat oven to 375.
- Line bottom of 3-qt baking dish with about half of the cornmeal mush.
- Spoon chicken mixture over cornmeal.
- Spoon remainder of cornmeal around edges.
- Sprinkle with cheese.
- Bake uncovered for 30 minutes until bubbly in center.

I'm a transplant from the USA living in Belgium.I've been over here now for almost 11 years so the "missing" things from home has kind of wore off. I love cookbooks, especially the local hometown, church or organization books and have a good collection going!
Not married but sharing a home, never had kids but "adopted" the ex's kids as my own, learned Dutch now trying Italian so I can keep up with the cookbooks!!
