Very tasty! It was easy to make and the taste was wonderful. I followed the recipe except I used black beans instead of black olives (just a personal preference). I will definitely be making this again...yum. Thanks for sharing.

This recipe is awesome comfort food..I made this using RoTel tomatoes, an extra can of green chiles NO green pepper and topped with 1/2 corn meal and 1/2 c corn muffin mix..I also topped with sour cream and some green onion before serving!** Just a note to let chefs know, this recipe does not say when to add the black olives so I added with the tomatoes, corn etc..(I will attemp to email Chef Nita)

This recipe is just like my grandma used to make. She always served it with a baked potato, and its no-frills goodness still makes my mouth water. I find myself making lots of substitutions, i.e. ground turkey breast instead of hamburger, olive oil instead of butter and skim milk instead of whole, but the flavors stand up really well to all the "low-sat-fat" changes. I suspect I'll be making it for Cinco de Mayo!
