- 88.74 ml butter
- 354.88 ml chopped onions
- 354.88 ml chopped red bell peppers (stemmed and seeded)
- 473.18 ml chopped poblano peppers (stemmed and seeded)
- 3 large jalapenos, stemmed, seeded and chopped
- 14.79 ml chopped fresh sage or 19.71 ml dried sage
- 22.18 ml dried oregano
- 1419.54 ml crumbled cornbread (one recipe for 9-inch-by-13-inch pan)
- 177.44 ml chopped fresh cilantro
- 354.88 ml crumbled corn chips (tostadas)
- 354.88 ml frozen corn kernels, thawed
- 709.77 ml chicken stock
- 295.73 ml canned cream-style corn
- 1 dozen pork tamale, unwrapped, chopped in 1-inch chunks
- salt and pepper
directions
- Melt butter in heavy large skillet over medium heat.
- Add onions, bell peppers, all chiles, sage and oregano.
- Sauté until vegetables are tender.
- Transfer to a bowl with corn bread.
- Mix in cilantro, corn chips, corn kernels, cream-style corn and heated chicken stock.
- Add tamales at the end and do not break up.
- Salt and pepper to taste.
- If stuffing is too dry, add a little melted butter.
- Place dressing in a buttered 9-inch-by-13-inchbaking pan.
- Cover with foil and bake dressing in a preheated 325-degree oven for 45 minutes.
- Remove foil and bake another 15 minutes, until brown.

Thank you for posting this! I saw this recipe a year ago in the Austin paper and made it for a pot-luck and then for my family, and it was the biggest hit!! I wanted to make it again this year but couldn't find the recipe. Until now! It is seriously the best stuffing i've ever had. ALSO i'm a vegetarian so I just used vegetable stock and veggie tamales. I can't wait to make it again.
