So simple and very yummy! I usually don't like enchies with flour torts but these were great. Just spicy enough. I had some thick pork chops that were rather dry to salvage and this was perfect. Great for leftover pork, would be even better with a shredded pork roast. Used unsweetened baking chocolate and mexican blend cheese. Added about a tablespoon of cheese to each enchie cause I was afraid my leftover pork was too dry on its own. I was really surprised just how good the sauce was, and so quick and simple to put together. Used a hand blender to puree directly in the pot. Thanks for sharing the recipe! I'll make this one again!

I had leftover pork that I needed to use, and all the other ingredients on hand. It was very easy to make, and didn't make a huge mess of the kitchen.

This is an okay recipe, but I wouldn't consider it authentic mole sauce. As far as I know, traditional mole is made mostly from ground peppers, and does not have tomatoes in it.

I really enjoyed this. Had some shredded bison left from a burrito recipe and used that just adding the mole to it while heating up. A terrific sauce, makes a nice change from the run of the mill.

As I was making this I wasn't sure how much I would like it (the tomatoes I had were really spicy and so the sauce was too) but after it baked I was pleasantly surprised! It was really yummy (still spicy but good)! I left out the red pepper since the sauce was so spicy and also added some extra cheese inside the tortillas. Authentic mole or not, it tasted good and that's all I care about! Actually, it reminded me a lot of a chile colorado I had recently at a Mexican restaurant... Served with a side of refried black beans. Thanks so much for the recipe Charlotte!
