      I had this with brown rice for lunch today. In addition to all the vegetables, I tossed in a handful of green peas as well and garnished the dish with some parsley. It made a very filling meal and a tasty one too! Thanks, Karen!

      I haven't tried this recipe, but I do want to point out to Karen that Spain and Mexico are actually two very different places with very distinct cuisines. The terms Spanish and Mexican are not interchangeable when it comes to food. Just wanted to let you know, it may be considered offensive to some.

      This was a quick and easy side for grilled steaks. I added a large tossed salad, and had a complete meal. Thanks for posting.

      Very easy to make and very versatile too! I found I was easily able to play around with the wegetables depending on what I have available and it is still great.

      A very easy and colorful dish that looks and tastes great! The only thing I would probably do different is to add more garlic, but that is just my personal preference. Thanks for sharing your recipe Karen!

      I have been making a similar combination for years. Sometimes I add a teaspoon of chilipowder. It also makes a great omelet fillin with a little cheddar cheese or queso blanco on top.
