I just realized as I was writing this review that I forgot to add in the diced tomatoes with chilis. OOPS! I did halved the recipe & left out the olives. Very tasty & none was left when dinner was over. I guess that means it was a big success! Made for Went to the Market Tag

very good---we really enjoyed this, i had planned to make enchiladas and realized i didnt have any tortillas so i was excited to find this recipe. my can of enchilada sauce was bigger (29oz) and i served it with sour cream. next time will serve with tortilla chips also- thank you!

I used the Louis Rich grilled chicken strips from the deli aisle, the adobo sauce leftover from a recipe the night before and salsa instead of the diced tomatoes. This recipe was incredibly easy and very tasty. My notoriously picky husband gave it a 5-star! I served with some cornbread and a salad.

A great way to use up leftover chicken. I halved the recipe, and baked it in an 8x8 inch pan. Very good blend of flavors and textures.

I made this for my family and they liked it. I used fresh tomatoes, green peppers and onions instead of the can and it turned out good. It took longer prep time though since I cooked the chicken, rice and black beans first before mixing it all together. But I would definitely make it again.
