This was absolutely the best! I had eaten sour cream enchiladas at a popular Mexican restaurant in Oklahoma while living there and thought they were good. This recipe has those beat. This recipe has the home confort food appeal! My four year old couldn't get enough. Thanks for the recipe. I will be making these agan for sure.

We loved these! Thanks so much! I made the recipe exactly as stated. Next time I'll use more chicken. I forgot to spray my pan with non stick spray but it didn't stick anyways.

Good basic sour cream enchilada recipe. It was very mild which made it easy for even those with picky palates to enjoy. Accidentally used veggie broth and fat-free sour cream (which I normally wouldn't do) but they still turned out great! I might mix some salsa into the sauce next time for a little more flavor.

Holy cow.... these are simply AMAZING!!! My husband's new favorite meal!!! Using cajun to give the chicken a kick is a must and the Rotel sauce is a great touch. Thank you for this great recipe!

Wow! These were amazing!!! I hated enchiladas as a kid but my dh asked me to make some so I grudgingly agreed. I'm soooo glad he did and I found this recipe! We will be making these again, without a doubt!

REALLY GOOD!!! You have to love sour cream to make this particular enchilada recipe. I was very surprised at the taste. I love the sour cream sauce that they have at some Mexican restaurants - this recipe fits perfectly!!! I didn't even add the chilies. The flavor was really good. Thank you!!!

I followed this recipe exactly the first time and it was fantastic! It was such a hit that I made it again (very soon after), for friends, but this time made it as a casserole, layering the ingredients in an eight inch round dish. it was again delicious. Definitely a keeper. Thank you Deb.

These were absolutely horrible. I love mexican food and tex-mex, but these were just bad (so bad that I actually created this account JUST to write this). Every recipe always has a couple people who give it bad ratings, but I never listen to them; I make the recipe anyway and it always come out great... Except this one. I wish I had listened to the others who said this was bad. I am a pretty good cook (I think so and I have been told many, many times by others) but I actually spit these out after the first few bites. You know something is bad when you spit out your own cooking. I'll go back to searching for a traditional enchilada recipe.

I made this tonight and it was delicious. My whole family really enjoyed it. I layered the ingredients in a 9x13 pan rather than rolling the enchiladas. I used 16 oz of sour cream instead of 8 and a lot more cheese than what was called for. I'll definitely will be making it again. Thanks for posting!

I am not a great cook but I have no problem following the instructions. This was simple and easy. If you can chop, fold and mix, you can make this. It was delicious. I modified it by adding a jalape?o for some kick and use a whole can of Rotel canned tomatoes with green chilies in the sauce. The pink sauce makes this dish look really elegant. I would definitely make it again and even for a get together dinner.

I replace the green pepper for jalapeno and it was great. Thanks for that good, eazy and fast recipe

i agree with this post.. ate one and threw the rest away. would give less than one star if i could..

I'm sorry, but these were nasty. I know how to make a roux, etc., and the sauce seemed promising when I put it in the oven. But when the dish came out, the sauce got "funny" after only a couple minutes. I refrigerated leftovers and heated some up for lunch today and -- disgusting, couldn't even eat it. The sauce itself needs to have cheese melted in to give it a better consistency; I will not be making these again. Sorry.

This was delicious. DH said it looked liked a picture out of a book. I think next time I will add some salsa to the sauce with the chillies. Yum

These were simple & delicous! I used less chicken & added some black beans & fresh cilantro to the batch I made. Served with some shredded lettuce, chopped green onion, & fresh salsa. SO GOOD. Thanks for a great recipe!
