  • Heat vegetable oil in cast iron skillet until at temperature for frying tortillas. Fry corn tortillas, during process try to make them into a "bowl shape" by pressing tongs in middle of tortilla while frying.
  • Heat skillet and brown ground beef until cooked and crumbled.
  • Put enchilada sauce in pot and heat on stove.
  • Grate cabbage and add Miracle Whip, mustard, and sugar to make cole slaw in a bowl. Mix until combined.
  • Grate cheese and chop green onions for garnish.
  • To eat, take tortilla and scoop in some ground beef, top with cole slaw mix, cheese, and a scoop of enchilada sauce. Garnish with green onions and serve! Enjoy!

  1. this would be good with some help....Instead of making coleslaw with miracle whip(yuck!) I'd make a southwestern coleslaw with cilantro, jalapeno, mayo, cumin and lime juice. I haven't tried it this way, but the way posted wasn't something I'd make again.

I really enjoy cooking, I have since I was young ( probably because my mom is such a wonderful cook - CIndyTC ).
