My Very Favorite Quesadillas

"I love these! Obviously, I don't make 4 at a time - more like 12, but you get the idea, the more tortillas, the more ingredients. I like to top these with Mock Sour Cream, which I have posted,and some fresh,chopped tomato.(and maybe a little of that leftover cilantro...)"

  • Arrange 1/3 cup of cheese, 1 tbl. green onion, 1 teaspoons chopped chilies, and 1 tbl. of cilantro on one half of each tortilla. Fold tortilla over filling.
  • Spray a large skillet with cooking spray, and set heat to high. Add quesadillas and cook and flip till tortilla is browned and cheese has melted
  • If you prefer, you can also brush the tortillas with oil and bake in the broiler until cheese melts, turning once.

  2. 5 stars for sure!! I used a mix of cheeses and I absolutely loved the green chili's in this. Could eat one for lunch every day :)
     
  3. Good, easy and versatile...that's a great combo. I did not use any cilantro since I loathe it, but otherwise made as written except for a bit of shredded cheddar added with the meunster. I foresee lots of variations with this recipe.

  5. Simple and Good! These quesadillas make a good breakfast or lunch. They are always delicious with salsa and sour cream. I usually have a piece of fruit with mine. Prepared as a participant in the July 2009 Event in memory of HEP MEP. May you rest in peace.
