Mom's Sour Cream and Chicken Enchiladas

- 680.38 g chicken breasts
- 14.79 ml olive oil
- 1 green bell pepper
- 2 jalapeno peppers
- 453.59 g sour cream
- 2 garlic cloves
- 4.92 ml chili powder
- 4.92 ml salt
- 4.92 ml black pepper
- 6 flour tortillas (burrito size)
- 226.79 g cheddar cheese, grated
directions
- Preheat oven to 350.
- Heat oil in large saute pan on medium.
- Cube chicken and cook in saute pan.
- Remove seeds from peppers, and dice.
- Press or mince garlic.
- Add peppers and garlic, along with seasonings to chicken.
- When chicken is cooked through, add 1/3 cup of sour cream to mixture.
- Drain.
- Coat 9x13 inch casserole dish with thin layer of sour cream.
- Fill tortillas with about 1/3 cup of chicken mixture, and place in dish.
- Spoon the rest of the sour cream over the enchilladas (being careful to thouroughly cover, because exposed tortillas will be crunchy)
- Sprinkle cheese over enchilladas.
- Bake for 20-30 minutes, until cheese is melted and slightly bubbly.

These were very good. I especially loved the taste of the filling. I would have liked a creamer sauce around them...I covered each well with sour cream as instructed...but it curdled while baking. It didn't affect the taste of course. I think next time I will mix a little milk with the sour cream I use for topping so that it is a little thinner topping. I covered it well with one of those 'fiesta' shredded cheese and served it with salsa. I will be making this again. Easy and good. I am a Christian, wife (as of 3/15/08), student, ABA therapist to some amazing little men with Autism, friend, first time homebuyer, and aspiring cook. My household consists of myself, my husband, a docile daschund named Buddy, and a hyperactive chiweenie named Samson. We are in the process of buying and fixing up our first home, and along with that- my very first kitchen!
My maiden name is Cook, and I feel a certain longing to live up to the title. My mother was a completley self-taught southern cook, and I learned most of what I know from hanging on her apron strings in the kitchen. I took a home ec cooking coarse in high school, which was taught by the traditional I'm-not-married-but when-I-do-get-married-it-will-be-my-whole-life-cooking-and-cleaning teacher. She regarded Betty Crocker's cookbook as a second to the Bible, and made sure we students did too. After that class my cooking passion went on hold until I got married and finished undergrad. Now, with a husband to feed, and in-laws to impress, I find myself watching food network, buying specialty kitchen tools, and searching websites for that perfect recipe, and that is how I found Recipezaar.
