Mini Baked Potatoes With Guacamole

These are great to take to a BBQ, or to serve as a light lunch. Yu could use 2-3 large potatoes if you want.
Directions:

Boil, steam, or microwave poatoes until tender.

Cut off the tops and scoop out the middles.

Place potatoes on a baking tray and spray with oil.

Bake for 10-15 minutes at 200C, or until golden and crisp.

Set aside to cool.

When potatoes have cooled, fill with guacamole.

Top each potato with a tspn of salsa, and sprinkle with parsley.

I used regular potatoes for this recipe. Otherwise I followed the recipe as listed. This is a nice lowfat alternative to sour cream and butter. The guacamole and salsa on the potato was great. Made for ZWT 2011.
