So yummy! Love anything with Avocado though! Perfect cool side dish for the Mexican Casserole and Sweet Corn Cake that I made tonight!

I love taco salads, especially with French dressing, so I went that route with this one (using my own dressing recipe). Otherwise followed the recipe except I forgot to buy an avocado. Used blue corn chips. This made a great quick dinner. Thanks for posting!

Excellent side salad that I served tonight with Slow Cooker Pork Chili Verde I was looking for something simple that I could make in advance since I had a busy afternoon today. I used 1/2 the dressing combo and only used about 1/2 cup of cheddar. I increased the tomatoes and sprinkled the corn chips into the individual bowls. My kids weren't fond of this but DH and I sure were. Pics to follow shortly.

This made a nice filling late night supper for me last night. I used ranch dressing and salsa for the dressing. I halved the recipe and used Dorito tortilla chips for the topping. Thanks Kitten!
