      Made this with brown rice because that's all I had. This is a very good rice recipe and I will be making it often. Made with Chipolte Roast (#59224) another awesome recipe. Thanks for posting.

      Made this for Mexican Night at family camp. There were two Mexican rice and this one with the cilantro was gone first. Thanks for a great recipe.

      I've made this recipe several times, and it is quickly becoming a favorite in my house. I followed the recipe exactly, except that I used brown rice instead. I cooked it in a covered casserole dish for 60 minutes at 350 degrees, and then fluffed it with a fork. Soooo good!

      I made it on the stove instead of the oven because I didn't have a dutch oven. After it came to a boil I covered it and turned it on low. I followed the recipe exactly, using fresh plum tomatoes, but not the extra pepper with seeds or the cilantro and lime. It tasted really good, but I had an issue with some of the rice grains being still a little hard and chewy. I even added a little extra broth towards the end and it didn't help. The flavor was really good tho, so I think if I make it again I will try a little more liquid.

      This recipe doesn't need another 5 star rating but I have to give it one. This was really good. I must say that I was "not too brave" when it came to adding 3 jalapenos - so I only used one - big mistake. It had a great texture - not sticky or mushy - perfect. It does make a ton of rice. Served w/Red Lobster Nantucket Baked Cod #221240 (which we make quite often & love) & corn.

      Great recipe. I made for Cinco de Mayo and it was a huge hit. My hubby told me he wasn't a fan of Mexican rice, but he said he loved it! Thanks for a great recipe.

      I love this recipe; it is by far the best rice recipe I've found, and I love how versatile it is. I make it often, never quite the same way, it just depends on what type of tomatoes/peppers I have on hand. And I love making it spicy. It is awesome with enchiladas and chicken and...everything! Or nothing. I make it so often that once in a while I would like to make it a little healthier....maybe save the rice for less frequent occasions. Does anybody know how to replace rice with quinoa in recipes or know if it works for this recipe?

      This is a GREAT recipe! I hardly follow any recipes when cooking but this one I always come too. I follow all of the steps but I add a bit more salt and a (small) dash of cumin. I love this recipe and won't use any other when cooking Mexican rice!

      This was yummy! I used less jalapeno than called for (family preference) and forgot to put in cilantro. I also used a rice/quinoa blend I got from costco and it was really good. Overall a big hit with the family.

      Amazing, amazing, amazing!!! I followed all the directions EXACTLY! It sounds complicated, but it was really, really simple!! There was not a clean dish in the house and NOTHING was left!! Thank you so much for sharing, this is a keeper!

      This is THE recipe! My kids love Mexican food, and I've tried several recipes to find the "right" one. This is going into our rotation and will likely be made on a weekly basis. Everyone loved it. The texture and flavor of the rice was perfect, and though it took a bit of time to prepare it was well worth it. :)

      I was really drawn to this recipe because of all the rave reviews! I've made it twice now and it is great! It has really spiced up my week and I plan to use it in a Mexican-style egg fried rice at the end of the week. I am trying to eat more whole grains and brown rice instead of white so I made it with brown rice instead and it was also delicious! The brown rice makes it a little bit chewier and very very filling.

      thankyou thankyou thankyou my search is finally over. I have tried different mexican rice recipes and finally decided to try this one. It is the best mexican rice ever absolute wonderful flavor and nice and fluffy. I am deleteing all the other recipes this will be my go to for mexican rice....

      I made this recipe for my wife's valentine 's day dinner and followed the directions exactly as described. I used canned tomatoes instead of fresh, and used a 10" dutch oven. The results were amazing!!! My wife said it was the best rice she had ever had and I have to agree. I really believe the trick is definetely the rinsing of the rice, which we had never done before any time we had made mexican rice in the past. I absolutely recommend this recipe to any one that wants REAL deal rice!!!

      Made this on Super Bowl Sunday! Wonderful. The best Mexican Rice any of us have ever had. I only used 2 jalape?os with no seeds and it had the right kick for a varied crowd.
