Meat Empanada Filling

"These little Spanish snacks (tapas) probably originated in the Middle East and were carried by the Moors into Spain. Travelers and traders could carry these snacks easily, and versions can be seen throughout the Latin world under various names. These delicious little minced meat pies are popular in Mexico and northern New Mexico at Christmas time. (See my recipe for Empanada Dough.)"

  • Boil meat until tender, cool, grind fine.
  • To 2 cups of the minced meat, add the spices, nuts, brown sugar.
  • The filling must be moist.
  • If the filling is too dry, add more apple jelly or corn syrup.
  • (Cooking time includes preparation time).

  1. That is the most ridiculous version of a sweet meat empanadas recipe of the New Mexico tradition that I have ever seen. People must think we don't know how to cook en el norte. We dont need to add mince meat if we know how to make it!

There I am sitting in front of the computer, one of my favorite spots in the house. When I'm not at the computer, I enjoy cooking and entertaining. See my icon? It is an old Royal typewriter. My father had one just like it that he gave me when I was in college. It had one key that stuck, but I typed all my term papers on that old thing.
