    Directions:

      Saute the onion and garlic in oil until tender.

      Add the lentils, chili powder, cumin and oregano.

      Cook and stir for 1 minutes.

      Add broth and bring to a boil.

      Reduce heat, cover, and simmer for 25-30 minutes or until lentils are tender.

      Uncover and cook for 6-8 minutes or until mixture is thickened.

      Mash lentils slightly.

      Stir in salsa.

      I omitted the onion and put a can of tomatoes and green chilis in place of the salsa. Also used beef broth instead of vegetable broth. The lentils needed to be cooked longer than stated in the recipe in order to get to the right consistency and that required just a little more beef broth for continued moisture while cooking.

      Once it was all done though, it was all very tasty!!
