- In a pan, mix together the water, chopped nopal, garlic, and salt.
- Cook on stovetop over medium heat, approximately 8 minutes.
- Remove from heat and drain in a colander. Let cool for 15 minutes.
- In a bowl, mix the nopalitos with the tomatoes, cheese, and cilantro as desired. Divide into 6 portions and serve with tortillas and beans.

While food has always been an important aspect of my family, my interest in cooking developed as I volunteered for Share Our Strength's Operation Frontline nutrition-through-cooking program for low-income families.
