Wow, was this good. Guacamole and eggs, what a novel idea. I used a hot n spicy, thick and tangy homemade tomato salsa with fresh cilantro and halapeno peppers. What a lovely treat for lunch, thanks so much for sharing Rita.

Good and easy! I used a spicy chipotle salsa I made about a week ago. Wow, I forgot

Loved these!! They disappeared instantly. Garnishes can be versatile too - like a black olive slice or sliver of a tomato, a dusting of chili pepper or a pickled jalapeno ring....but the cilantro flavor is a must for us!! I like the flavor combinations so much that I had to make a second batch - but this time I chopped the eggs and stirred it all together to put into lettuce lined tortillas for lunch! Can you tell I like this one Rita ;) ?
