Grilled Chipotle Mexican Black Bean Burgers

"At our house we love healthy food! The only requirement is that it also has to have taste , as well as being healthy. Who wants to eat healthy, if it tastes like cardboard? If you love mexican food, you are going to like these burgers!! Perfectly seasoned and great for healthy grilling. This recipe was found in an issue of First magazine. Makes 4 burgers."

  • Heat grill or broiler.
  • In skillet cook sliced mushrooms in one tablespoon canola oil for 6 minutes.
  • In bowl, combine cooked mushrooms, black beans,chopped onions,bread crumbs, fresh cilantro,chopped chipotle in adobo, cumin, and Montreal steak seasoning. Form into 4 patties.
  • Place on greased grill or broiler rack.
  • Grill 4 minutes, turning once.
  • Top with 1 cup shredded mexican cheese, divided. ( or 1 cup Shredded soy cheese)and 1/2 cup salsa.
  • Cook one minute. Serve on toasted multi grain.
  • hamburger buns or multi grain bread.

  1. My husband and I really enjoyed these. I forgot to put the cilantro in them, and did not have any mushrooms, but they were still delicious and the flavor was amazing. I sauteed the onions with one garlic clove, and added onion powder and about 2 tbsp. medium salsa. I would definitely make these burgers again, thanks for sharing :)
     
  2. We really enjoyed these a healthy meal. Depending on the size of the chipolte pepper you use, these can get pretty spicy quickly. Next time I won't pull out the biggest pepper in the can. :) We combined this with a mexican coleslaw which helped calm the spice a bit. Definetly will make again!
     
  3. My wife said it was one of the best burgers she has ever had, and I agree. I also had no trouble getting the patties to stay together.
     
  4. We loved this recipe! I thought it had the perfect amount of chipotle. I didn't have any trouble getting the burgers to stay in one piece; I used a potato masher to break the beans up a bit, and the burgers easily formed patties. We used cheddar cheese on the top, but I think these burgers would be really good without any cheese, too. Thanks for posting this; I know I'll be making it again.
     
  5. These had good flavor, but they didn't hold together well enough to remove nicely from the indoor grill I used. If I make them again, I will add some breadcrumbs, like the other recipes called for. Also, I added some chopped cilantro, for extra Tex-Mex flavor.
