Enchilada Casserole

"Posted for a recipe request for a casserole using Doritos. Haven't tried this, but it sounds really tasty and simple."

  • 1 bag nacho cheese flavor Doritos
  • 1 12 lbs hamburger
  • 13 cup chopped onion
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 1 can cream of chicken soup
  • 1 can enchilada sauce
  • grated cheddar cheese
  • shredded lettuce
  • diced tomato

directions

  • In large skillet, brown hamburger and chopped onion.
  • Preheat oven to 400 degrees.
  • In 9x13-inch baking dish, place a layer of Doritos (large pieces broken up) to cover bottom of dish evenly.
  • Spread browned hamburger over Doritos.
  • In bowl, mix all three soups together well, using no liquid.
  • Layer the soup mixture over the hamburger.
  • Top soup mixture with enchilada sauce, then sprinkle grated cheese on top.
  • Bake at 400 degrees for 8-10 min.
  • or until center is hot and cheese is melted.
  • Top with shredded lettuce and chopped tomatoes.

  2. Very easy to make, but didn't have alot of flavor. Next time, I'll add spicy salsa or some jalapenos to give it a little kick.
     
  3. I made this for my family and had my 4 year old daughter help. She loved crushing the doritos and stirring the soups. Everyone gobbled it up. I didn't have any lettuce or tomatos, but will add those the next time I fix this. This was a simple, fast lunch, and I will definitely use it again.
     
  4. Even though I forgot the lettuce and tomatos, my family loved this recipe :) Will definetly use this recipe again. Next time we'll try it with lettuce and tomatos. This recipe was very fast and easy.

I am a single gal, living on my own; currently working as an Occupational Therapist & living in Cumberland, MD. (It is "God's Country" out here...beautiful!) I LOVE to cook and bake, and love anything that looks, tastes, smells, or even closely resembles a veggie. I LOVE moo-cows, and therefore, cannot bring myself to eat any part of the adorable critters (i.e. NO RED MEAT!!) I love the outdoors, and pride myself on being the master griller on the fire pit. My mother's side of the family is 100% Polish, so I have an inborn passion for cooking...unfortunately, along with that comes a love of eating, too!!
