El Pollo Loco Mexican Beans

From the El Pollo Loco restaurant, these beans are simple and tasty as a sidedish to a Mexican meal.

• Total Time: 25 mins
• Prep Time: 5 mins
• Cook Time: 20 mins

Ingredients:

Servings: 6

• 1 tablespoon vegetable oil
• 1 whole serrano chili
• ¼ teaspoon serrano chili , ground
• 1 (28 ounce) can pinto beans
• 1⁄3; cup water

Directions:

1. Heat oil and whole chile in sauce pan.
2. When chile is tender, add ground chiles, beans and water. Stir well. Bring to a boil, reduce heat and simmer 10 to 15 minutes.

I live in Idaho now and we don't have El Pollo Loco here, I really don't miss much about Ca expect the weater and Pollo Loco!! We made the beans last night for a party and they taste JUST like El Pollo Loco beans YAY...................... Thank you for the recipe : )

This technique add great flavor to canned beans. I did not drain the beans and added just a bit of water. I used ground ancho chile pepper instead of ground serrano because that's what I had. I sliced the whole serrano chile lengthwise before adding it to the beans. Spicy and good.

Surprise, surprise...I really didn't think this would have any real flavor...but it did. I have to admit that I cut the recipe in half but used the full amount of chili (sliced and kept in the beans) only because we love the heat. Now...it didn't say to drain the beans and based on looneytunesfan photo I decided not to add any water. Loved it! Thanks for posting. :)
