Easy Crock Pot Beef Enchiladas

"This is an easy version of my easy oven baked beef enchiladas. There is probably a recipe like this, but I didn't use one and will make it often as it turned out well. It's also very easy. My hubby was hungry for this, but I wasn't going to be home, so I threw this together about 2 pm. He got home about 6 pm and said the smell was so good, he didn't take time to change clothes. I came in about 8 pm and even tho he had turned it off, it was warm and very good. Be sure not to over-cook as it will be dry and the tortillas tough on the edges. I think 4 hours would be the perfect amount of time. Serve with warm flour tortillas and butter or chips."

  • 453.59 g ground beef, browned
  • 1 medium diced onion
  • 411.06 g can diced tomatoes
  • 113.39 g can diced green chilies (mild or hot)
  • 297.66 g can cheese soup (I was out of cream of chicken)
  • 354.88-473.18 ml grated cheese (I used mild cheddar)
  • 35.43 g package taco seasoning (or make your own with chili, cumin, onion, and garlic powder to = 3T)
  • 236.59 ml milk
  • 10-11 corn tortillas

directions

  • Brown hamburger and onion together.
  • Drain excess fat and add diced tomatoes (with juice).
  • Add chopped chilies and taco seasoning.
  • Simmer 5 minutes.
  • Spray inside of crock with cooking spray and place 4 corn tortillas in the bottom and spread 1/2 of the meat mixture.
  • Spread 1/2 the can of cheese soup on top of meat and place 3 more tortillas on top of cheese soup.
  • Pour in remaining meat mixture and place 3-4 more corn tortillas on top.
  • Spread remaining can of cheese soup on tortillas and sprinkle 1 1/2 to 2 cups shredded cheese.
  • Pour 1 cup milk evenly over top--do not stir.
  • Put on lid and cook on low up to 5 hours.

  2. This tasted good but pretty much disintegrated at the recipe suggested cooking time. I will make this again but only cook it 2 hours, maybe 3 max. Thanks for the recipe.
     
  3. This is sooo good!! I made it exactly per the recipe, I just added a can of corn to the beef mixture! Super good and great as leftovers warmed up. I just served with sour cream and black olives. This will be a weekely staple at our house! YUMMMM!!
     
  4. yuck. maybe i did something wrong. enchiladas came out horrible and the tortillas were very soggy. did not taste good. wont be doing this one again.
     
  5. I hate to do it, but to be honest we threw part out. I think the biggest thing was the cream soup for us. It also was a little on the greasy side with so much cheese on the top. I did really like the flavor of the meat with the tomatoes and the chilis. I really liked the idea of being able to do enchiladas in the crock pot, but we just won't be using this recipe again. I am going to adapt some sort of taco filling from the meat part though.

  1. I apologize for this long review. I made this dish on an evening when I knew I'd have people coming in and out, looking for food. I made this pretty much as peppermintkitty wrote it, except that I substituted one can of Rotel Original diced tomatoes and green chiles for the can of diced tomatoes and can of diced green chiles. Also, I used a bulk taco seasoning that I buy at a store nearby, which worked out well. For the milk, I used skim. Anyway, the first 'taker' ate it like a dip, with tortilla chips and liked it but said there was way too much cheese (I used 1 1/2 cups of mild cheddar). The 2nd 'taker' ate it with heated, flour tortillas and loved it, saying it tasted like tamales. His son ate it with chips and had 3 helpings, almost wiping it out for number 4, who also had it with flour tortillas and loved it! I was left with a scant cup; in the end, it fed 6 people. This is a good recipe that is totally open to tweaking...I especially would like to find a way to eliminate that can of cheese soup. Good recipe PK, thanks for sharing it.

I am retired and live in Oklahoma. We use to raise scottish terriers, but now just enjoy having 3..one of which is a rare wheatland scotty. We have 2 grown daughters and my oldest has my grandson & granddaughter. Katy is almost 13 now, and I love and cherish the time she spends with me. My youngest dd is FINALLY having a baby,,a little girl due on April 1 '05. We are very excited! Hubby and I love taking out our pontoon boat every chance we get...we love to fish, but I'm happy just to be out on the water :) I love all kinds of cookbooks, especially southwest and cooking for two meals. Of course Zaar is the best recipe site on the net! I've started copying zaar recipes for my granddaughter and she says she'll never be able to make them all :) My hobbies include my dogs,,grandkids, painting art hobbies, and most crafting...love garage sales too!! I really love working outside in my gardens, but health and "old bones" keep me from it more than it used to. My hubby and I love to travel and also fish. I have used this site for awhile now and I'm embarrassed I haven't shared more of mine. Guess I've been busy making yours! When I have a question, the members here are so friendly, helpful and very quick to answer back! Of course, you've figured by now I love to talk!! I have to say my love for cooking comes from my mom. She is one of those cooks that just gets into the kitchen and starts cooking with no recipes and everything she makes is wonderful! She's about the best "all around cook" I know! I'd like to think I "inherited" some of her cooking intuition :) But getting close to 80 (sorry mom, but you sure don't look it) she cooks circles around me!
