Great idea! I added a layer of cooked rice and some chopped onion to make it go a little farther. Since I added the rice I put a little more broth into the mole (only 1/4 cup) to thin it out a little. I cooked it in my crock pot on low for 3 hours. I think the next time I make it I might add a layer of black beans as well and garnish with cilantro and sour cream. So yummy! I took it to a potluck at my church and everyone raved about it- so thanks for the recipe!!

If you like mole, this is a very good dish. Quick and easy. I put nonfat plain yogurt on it in place of sour cream. I also used only 6 corn tortillas using 1 cup of chicken/sauce mixture for layers. I did not find it dry at all.

I used my own mole sauce for this recipe. I did mix the shredded chicken with about 1/2c sour cream and about 1/2c shredded cheddar for moistness and flavor. Followed your recipe from there. Very good. Thanks.

I can't rate this because this recipe never actually came to completion for me. After making the mole sauce according to directions (using Dona Maria brand mole), I tasted it and I can honestly say that it was one of the most repulsive flavors to have ever crossed my lips. I often get chicken mole from our local Mexican restaurant and I love it, but the store bought stuff was absolutely nothing like what I've had in restaurants. Perhaps a different brand of mole sauce would make a difference.

This was a simple and easy to make dish. I had never made a recipe using mole before, I think it's a little bland for my taste. If I make it again, I might consider topping it with some hot enchilada sauce. Thanks!

EASY and GOOD is right! I used fresh corn tortillas and the Dona Maria mole paste as suggested - spicy and authentic-tasting - like something you'd have at someone's home in Mexico, not at a U.S. chain restaurant. It was not dry at all and cuts into wedges very easily like a quiche. Not low fat or particularly healthy but I'll still make this again!

This was very very good! I could not find a mole paste without hydrogenated fat, so I used a mole sauce and omitted the added broth. It was a 16.5 ounce jar, and was plenty of liquid for the recipe. I have to imagine this dish depends largely on how yummy the mole you get is, and the one I got was really good (Archer Farms brand from Target). I used one roasted turkey breast in this, shredded jack just on top, and baked it in a lasagna pan. I think the corn tortillas are a must in this. Nonfat sour cream made for a great topping. Thanks for the very yummy and easy recipe, Kiwi!

Very good. I found this to be a little dry so the second time I made it I added more liquid. I used flour shells, I also added some hot pepper cheese slices. That gave it a little bite and was so good.

This was really delicious! My only complaint was the pie plate was a little small for the amount of stuff so it ran over in the oven - maybe a high-sided pie plate or round casserole would work better. I used flour tortillas, though corn are probably more traditional (I just prefer flour ones). I also used Asadero (a Mexican cheese) instead of the called-for cheese. I didn't have any sour cream but think it would be a tasty topping (will do that next time lol). Thanks for the recipe!
