Chicken
- 3 chicken breasts
- 2 lemons, juice of
- 29.58 ml canola oil
- 1.23 ml salt
- 1.23 ml pepper
- 4.92 ml paprika
- 44.37 ml flour

The soup base
- 44.37 ml canola oil
- 3 garlic cloves, minced
- 1 small sweet onion, finely chopped
- 1 anaheim chili, seeded and finely diced
- 1 jalapeno pepper, seeded and finely diced
- 59.14 ml carrot, finely chopped
- 793.78 g can crushed tomatoes
- 411.06 g can petite diced tomatoes
- 2 (850.48 g) can white beans, drained and rinsed
- 236.59 ml low-sodium low-fat chicken broth
- 118.29 ml water
- 14.79 ml chili powder
- 1.23 ml cumin powder
- 2 chipotle chiles in adobo, minced
- 236.59 ml frozen sweet corn
- salt and pepper

directions
- For the marinade, whisk together the lemon juice, oil, paprika, salt and pepper.
- Add chicken breasts and let marinade at least 10 minutes, up to 1 hour.
- Grill chicken until cooked through. (You could use a fry pan or broiler if you wish).
- When cooked through, wrap loosely in heavy duty foil and let rest 10 minutes before dicing into 1/2" cubes.
- Toss chicken cubes with flour and set aside.
- For the soup base, heat a large pot over medium heat, then add onion, garlic, jalepeno, anaheim, and carrot. Cook for 10 minutes or until vegetables are translucent.
- Add tomatoes, beans, chicken broth, chili powder, cumin, and chipotles. Let simmer for 10 minutes.
- Add flour coated chicken to pot along with the water (add extra later on if its too thick). Cook 5 minutes or until raw flour taste is gone.
- Remove from heat and add corn.
- Serve and enjoy!

This was pretty good... we left out the chipolte chiles (kids) and used chick peas instead of white beans. It had a really nice flavor and my kids devoured it :) If we make this again, we would use some more spices. I bet this will be REALLY good as leftovers once the flavors get through it. I made this for the Fall '06 Pick-A-Chef!

I live in Central Washington State with my husband and Golden Retriever, Hallie. I'm back in my hometown after earning my Bachelor's Degree, and I work at a Brokerage firm.
I've loved cooking my whole life, and really delved into it during high school when I got put in charge of cooking for my family of seven, who were all picky eaters or had dietary restrictions. I really like to experiment in the kitchen- its one place where my creativity can really flow. I rarely measure ingredients unless I'm baking- but I occasionally bust out the scales, spoons, and cups so I can post accurate recipes.
Nowadays I cook lightened versions of my favorites. I joined Weight Watchers in April 2007 and have lost 40 lbs on the program- it has really changed my life. I recently started working as a receptionist for Weight Watchers meetings on top of my full time job because I enjoy the program so much. WW has helped out my Hubby, too- He has lost around 30 lbs as well just by eating my lighter cooking :) I like the challenge of making healthy but delicious food.
My favorite TV Chef is Alton Brown- I own all of his cookbooks, and like how he has a reason for everything he does. Plus, I like to jerry-rig things and he's a sort of MacGyver in the kitchen.
My biggest challenge in cooking is making food that appeals to me while not disgusting my husband. He likes very simple, and somewhat bland foods. He hates garlic and onions, so I've really had to scale back there, though I won't give them up completely. I love to try new flavors and cuisines, while he would be happy eating Hamburger Helper.
I'm just getting in to baking bread. I've tried using my KitchenAid mixer and actually prefer doing it by hand- nothing better than hot bread fresh out of the oven!
I'm also a regular poster in the exercise/High activity forum since I started running earlier this year. My plan is to participate in all our local fun-runs.
