  • Brown beef in skillet, drain fat.
  • Add in soup, salsa, water, tortillas, and half of cheese.
  • Heat to a boil.
  • Cover and let cook for 5 minutes or until hot.
  • Add remaining cheese before serving!

  2. very quick and easy to throw together which is exactly what i needed tonight. i didn't have tomato soup so i used a small can of tomato sauce and 3/4 of the salsa. added some chopped onions to the ground beef, topped with a little sour cream. I don't think the soup was overpowering but it lacked something.. maybe some taco seasoning on the beef would do the trick? still a great weeknight meal and the kids loved it so its a keeper.
     
  3. My family really enjoyed this quick and easy dish for those busy days! I did not have tomato soup or tomato sauce and decided not to add a can of diced tomatoes.Instead,I added additional mild chunky salsa.When cooking the meat ,I added chopped onion and garlic and a teaspoon of taco seasoning. I will defiantly prepare this dish again.
     
  4. Awesome! I tried this and it was a success with my family.Then I tried it again with chicken breast and it's a favorite now, all I do is add black beans and corn to make it complete.
     
  5. Made this from a Campbell's add in a magazine and it quickly became a staple in my rotation. Everyone loved it - nice, squishy comfort food and it's super easy. Next time I will mix reduced fat Velveeta in at the end and omit the shredded cheddar. FYI - I wanted to get it down to 7 WW pts/serving, so here's what I did: used 4 flour tortillas instead of 8 which was plenty and decreased the serving size to serve 6 instead of 4.

Tweaks

  1. I added a pkg of chili seasoning after browning and draining the meat. I also added: a can of tomatoes with green chilies, a can of corn, and a can of black beans (rinsed and drained). I did not use any salsa, but added a heaping spoon of sour cream when served.
     
  2. Use tomato sauce instead of juice.
     
  3. Instead of adding the corn tortillas into the skillet while cooking, I decided to crisp/toast the corn tortillas. I used a small can of tomato sauce and a few pieces of fresh/canned/stewed tomatoes with some of the juice. Oh wow. I can't always do salsa or something super spicy but I used a quarter to a half of a packet of regular Taco Seasoning. It tasted even better. The tomato soup was a great base. I grasped onto the suggestion that peas would have been good in the dish to compliment the corn and tomato tastes. My boyfriend who thought this was an awesome recipe suggested the adding of peas. Overall a GREAT tasting recipe that can easily be adapted to anyone's preferences and diets.
     
  4. This recipe is one of the fastest and easiest recipes I've ever made. It was very tasty. The negative was that it doesn't serve a lot of people. My husband, myself and 2 boys all ate but the boys didn't take seconds. I would suggest adding more tortillas to the recipe to make a little more if needed. For the salsa I used Pace Southwest Chipotle and it was really good but just a tiny bit spicy. I did not have tomato soup so I used tomato sauce instead. I added Sazon (sold in packets at the store), garlic, salt and cut up onions to the meat for flavor. Overall, I did love this recipe for a simple meal on the lazy days that I do no feel like making a huge meal.
