I loved it! I made this several weeks ago and then I made it again last night. Both times I made it according to the recipe and both times I thought it was fantastic.

Simply outstanding! I made this dish without the spinach due to family preference. I also added 3 teaspoons of the chipotle sauce to the finished cream and chipotle sauce, and I used heavy whipping cream. I served the chicken over yellow rice and spooned the sauce over the top. The chicken was very tender with a crispier crust from the broiling, and the sauce was very creamy with a bite from the chipotles. My family was very impressed with this dish and voted a 5 stars 'round the table. A keeper, we will be having this often. Thanks so much!

This is incredible! I guess there's a reason why Rick Bayless has his own show :) I used whipping cream, even though I probably could have found creme fraiche here in Arizona. I steamed some rice on the side, but it really wasn't needed, as this was a very filling dish. I think next time I am going to double the spinach and sauce, because we were all licking our plates wishing there was more! This recipe deserves more than 5 stars, they just don't do it justice!

Delicious dish that's easy to make and presents well. I made as directed, except for substituting evaporated milk for the cream to lighten it slightly. Turned out wonderfully. Next time I'll double the spinach/sauce for our personal tastes. Thanks for posting this Mean Chef!

Fabulous dish! I have made it twice now and my husband and I just love it. I used 1 c whipping cream plus 1/4 c sour cream in lieu of creme fraiche -- it's almost the same thing. This one is a definite keeper!

I love this recipe!!! I get spinach and my kids and husband will also eat it. I cook onions and garlic in butter then make the sauce with them and it works great . I also add some adobo sauce to the spinach. I forgot spinach at the store for the last month and finally I rembered this week it was worth the wait.

WOWOWOWOW! This dish had all that we love! Lots of heat!! Cooking time was a bit off, we had to broil for nearly 20 minutes, but other then that followed the recipe to a T. Thanks for carrying this one over, ms_bold!

i enjoyed this very much. it was too spicy for my kids and dh so i was the only one who ate it. i had to add lots of salt when my dh taste tested because he claimed it was too bland and only tasted heat and cream. that's his opinion. i thought it was great!

I've had this one on my watchlist for a long time -- excellent flavor -- I used lowfat evaporated milk and constarch to thicken to save myself from the fat and actually turn this into a healthy meal. Easy to make to boot. Can't wait to eat the leftovers.

The sauce is so simple, yet so incredible! I don't even like spinach but next time I make this I will double it. Only complaint is no bread to soak up the sauce-had to lick the plate instead!!

Took other's comments to heart and doubled the creamed spinach portion of the recipe using lowfat evaporated milk. The only accomodation that required was using some cornstarch to thicken the sauce. Great flavor.

It was really great, I halved the recipe except chipotle chiles. I doubled them actually, and it was juuuuust right. My husband almost cried cause it was too hot for him I guess. But I didn't care cause it was tooooooo good ! Thanks for sharing this recipe! I'll make this again and again and again !

WOW!! Absolutely delicious! The chipotles in adobo really flavor the chicken and sauce wonderfully. Followed recipe as written--used Crema, superb results. Will definitely double or triple spinach next time--it is simply amazing with this sauce and chicken! Big thanks for this truly great, "make again and again" recipe!

I made this twice the first time exactly as written and the second time I used frozen spinach and doubled the recipe. Both times it was awesome! The second time I served it over pasta and it was fantastic! Great Recipe! Thanks Mean Chef!

This was heaven on a plate, and so darn simple to prepare. The more of your recipes I try, the more I am learning. For one, even though the recipe sounds difficult, it usually isn't, and most importantly, from all your recipes I have tried, your cooking temps for the meats are always right on the money, this one no exception. It produces a very moist piece of chicken, and the spinach is SCRUMPTIOUS.
