- 2 cups frozen corn
- 1 (15 ounce) can black beans
- 1 red bell pepper
- 1 medium onion (sweet or red)
- 1 jalapeno
- 1⁄4 cup fresh cilantro
- 2 tablespoons red wine vinegar
- 2 tablespoons olive oil
- 1⁄4 teaspoon kosher salt
- 1⁄4 teaspoon black pepper
directions
- Thaw corn.
- Drain and rinse black beans.
- Dice onion and bell pepper.
- Mince the jalapeno (remove seeds and center for mild).
- Finely chop cilantro.
- Combine Ingredients in medium bowl and stir to mix evenly.
- Adjust vinegar and oil amounts to taste.
- Good freshly made, better after a day in fridge.
