      I've never had nor made taquitos before. To be truthful....I didn't even know what they were. :) Now I'm a fan. I thought these were wonderful. Loved how nicely everything came together (omitted the cumin), and a great use for leftover chicken. Actually, you could use any meat and I'm sure you'd get the same great result. I will have to practice my 'rolling technique' though. ;) Thanks for sharing your recipe Flygirl. Honoured to make this as a "Thank You" for voting for Lawrencetown, Nova Scotia in the 2010 Kraft Hockeyville Competition.

      We enjoyed these as a snake yesterday. I did use chili seasoning in place of the cumin and added a little red pepper flakes to spice this up some. Topped this with some cheese dip and slices of avocado and we really enjoyed. I also used rotisserie chicken which made for a quick snack. Thanks. Made for the diabetic tailgate forum. :)

      Sorry, I thought these were very bland. Maybe the addition of some chili powder or adobo would help.

      I made these using corn tortillas. The softening the tortillas in chicken stock appealed to me; however, due to the tortillas I was using the technique really didn't work for me. Maybe the tortillas were getting a little old. I'll try the technique again. Really enjoyed the combination of spices. I used leftover rotisserie chicken making this a super quick meal. The taquitos were topped off with an avocado/yogurt sauce and served with red cabbage slaw. A very attractive dinner plate. Made for the Diabetic Forum and the 2nd Annual Tailgate Party.

      This was absolutely delicious! I love it when a good recipe turns out to be easy to prepare, and this fit the bill :) I used whole wheat flour tortillas, and they turned out great. My whole family devoured these! Lots of cilantro and some sour cream on the side and it was a great, fast, weeknight meal. Thanks for posting! Made for PAC '10 :)

      These are really good! Made these a couple of weeks back and a repeat about to happen. Other than subbing parsley for the cilantro (because that is what I had on hand) made as posted with great results. Used shredded cheddar cheese, will go with monterey jack for next time around - we love both. Can't wait to serve these to family and friends! Thank you for sharing - into my Family Favourites for this one!
