- 157.80 ml dried hibiscus flowers
- 946.36 ml cold water, divided
- 78.78 ml granulated sugar, to taste
directions
- Put flowers and 3 cups water in a saucepan and bring to a boil; continue boiling approximately 5 minutes.
- Remove from heat and add remaining cup of water and sugar.
- Set aside at least 4 hours (or overnight).
- Strain into a pitcher and refrigerate.
- Serve well-chilled.

I've been lucky enough to visit both Mexico and Bali over the last year and learned to appreciate chilled hibiscus tea in both places. My kids love this recipe which makes a strong purple drink that reminds me of cranberry juice. In Bali, they drink it very diluted so the flavor is delicate and they add a little lemon juice, which magically changes the color to light pink, like pink lemonade. It also stretches the flowers a little farther, much appreciated here where they are hard to get and a little pricey.
